Quinoa, Turkey and Broccoli Salad Quinoa, Turkey and Broccoli Salad (2)

Serves: 4

Ingredients:

  • 300 gr Turkey breast
  • 100 gr French beans
  • 100 gr Broccoli
  • 20 gr Ginger
  • 1 tbsp Cocunut oil
  • 1 tbsp Sesame oil
  • 1 tbsp Soy sauce
  • 3 Spring onions
  • 100 gr Cooked quinoa (make your own)

Method:

    Put the french beans in boiling water and leave to boil for 5/6 minutes
  • 2
    Cut the large broccoli lenthway and add the broccoli to the boiling water and leave to boil for further 5/6 minutes
  • 3
    Cool down the french beans and the broccoli under cold water and drain
  • 4
    Cut the turkey breast in slices or dices and season with salt, while in a frying pan melt the cocunut oil

    Add the turkey and leave to cook for 10 minutes until start to become brown
  • 6
    Cut the ginger finely and add to the turkey stirring often. Leave to cook for further 5 minutes until the ginger starts to color

    Add the french beans and the broccoli leave for 2 minutes to cook with the turkey than take the heat off

    Sprinkle sesame oil and soy sauce on top and genlty stir to mix

    In a serving bowl put the quinoa and on top the turkey and vegetables

    Chop the spring onions finely and sprinkle on top of salad
