Aubergine Dip Aubergine Dip (1)

DIFF: Easy -- PREP: 30 mins -- COOK: 30 mins
Serves: 4

Ingredients:

  • 1 Aubergine
  • 2 clove Garlic
  • 2 tbsp Extra virgin olive oil
  • 4 tsp Tahini
  • 10 gr Coriander
  • 1 tbsp Lemon juice
  • ½ Green chili
  • Salt and pepper
  • Flat bread (make my own)

Method:

    Heat a frying pan and add the olive oil
  • 2
    Cut the aubergines in slices about half cm thick
  • 3
    Cook the aubergine slices in the pan 5 minutes each side until soft
  • 4
    Leave the aubergine to cool down a bit. Then transfer the aubergine into a mixer add the garlic, tahini, chili, salt and pepper

    Blend until smooth
  • 6
    Chop the coriander, transfer he mixture into a serving bowl and sprinkle the coriander on top
  • 7
    Serve the dip with some flat bread
