DIFF: Easy -- PREP: 10 mins -- COOK: 1 hour and 15 mins
Serves: 4

Ingredients:

  • 1 Carrots
  • 1 Onion
  • 1 stalk Celery
  • 1 clove Garlic
  • 2 tbsp Extra virgin olive oil
  • 240 gr Chickpeas (1 tin)
  • 3 cups Vegetable stock (make my own)
  • 1 handful Mixed rosemary and sage
  • 2 tbsp Tomato
  • Salt
  • 1 tbsp Italian seasoning

Method:

    Thinly chop the carrots, onion, celery and garlic
  • 2
    In a medium pan warm the olive oil put the chopped carrots, onion, garlic and celery and leave to cook for about 10 minutes
  • 3
    Add the drained chickpeas and leave to cook for 5 minutes. Add some salt
  • 4
    Add the rosemary, tomatoes and vegetable stock
  • 5
    Boil for about 60 minutes
  • 6
    Remove the rosemary sprigs before serving and add the Italian seasoning on top
