Serves: 4

Ingredients:

  • 1 Carrots
  • 1 Onions
  • 1 stalk Celery
  • 1 clove Garlic
  • 80 gr Spelt
  • 2 sprigs Rosemary
  • 1 sprig Sage
  • 400 gr Borlotti beans
  • 2 tbsp Extra virgin olive oil
  • 100 gr Tomatoes
  • 1 Potatoes

Method:

    Chop the carrots, onions, celery and garlic
  • 2
    In a warm pot add the olive oil and the chopped vegetables and cook for 10 minutes until tender
  • 3
    Add the spelt, borlotti beans, rosemary and sage and cover with water
  • 4
    When the soup boils add the tomatoes and the potatoes
  • 5
    Close the pot with a lid and leave to boil for 1 hour
  • 6
    Before serving add some extra virgin olive oil and season with salt
