Vegetable Soup Vegetable Soup (4)

Serves: 4

Ingredients:

  • 1 Carrots
  • 1 Celery
  • 1 Onions
  • 1 Courgettes
  • 1 Potatoes
  • 150 gr Pointed cabbage
  • 3 tbsp Extra virgin olive oil
  • 1 Garlic
  • Salt
  • 600 ml Water

Method:

    In a medium pot warm the olive oil

    Cut the carrot in chunks and put on the pot. Mix with a wooden spoon and add a bit of salt. Cook for 3 minutes

    Cut the celery in chunks and put on the pot and add a bit of salt on top. Mix all the vegetables in the pot. Cook for 3 minutes

    Cut the onion in chunks and put on the pot and add a bit of salt on top. Mix all the vegetables in the pot. Cook for 3 minutes

    Cut the courgette in chunks and put on the pot and add a bit of salt on top. Mix all the vegetables in the pot. Cook for 3 minutes

    Cut the potatoes in chunks and put on the pot and add a bit of salt on top. Mix all the vegetables in the pot

    Cut the pointed cabbage in chunks and put on the pot and add a bit of salt on top. Mix all the vegetables in the pot. Cook for 3 minutes

    Add the garlic and mix well and cook for 5 more minutes stirring frequently until all the vegetables are soft

    Boil the water and add the boiled water to the vegetables

    Cook for 30 minutes and then blend with a mixer until smooth
