Vegetable Couscous Vegetable Couscous (2)

Serves: 4

Ingredients:

  • 300 gr Couscous
  • 1 clove Garlic
  • 1 tsp Thyme
  • ½ Chicken stock cube
  • Salt
  • 4 tbsp Extra virgin olive oil
  • 1 Red pepper (chopped)
  • 1 Courgette (chopped)
  • 1 Aubergine (chopped)
  • 100 gr Rocket leaves

Method:

    Place the couscous in a saucepan. Add the boiling water, half of the olive oil, the garlic, thyme and stock cube
  • 2
    Season with salt. As soon as the water boils remove from the heat. Cover and leave to steam for about 20 minutes
  • 3
    Place the pepper, courgette and aubergine in a large bowl. Season add half of the olive oil and cook for 8 to 10 minutes

    Once the vegetables are cooked fluff the couscous up with a fork. Add the vegetables
  • 5
    Season the rocket leaves with salt, olive oil (and balsamic vinegar - optional) then add the leave to the mixture
