Tomatoes and Chickpeas Couscous

Serves: 4
Ingredients:
300 gr Couscous
1 clove Garlic
1 tsp Thyme
½ Chicken stock cube
Salt
4 tbsp Extra virgin olive oil
240 gr Cherry tomatoes
240 gr Cooked chickpeas
2 tsp Italian seasoning
300 ml Water
Delicious couscous with cherry tomatoes and chickpeas
Method:

Place the couscous in a saucepan. Add the boiling water, half of the olive oil, the garlic, thyme and stock cube

Season with salt. As soon as the water boils remove from the heat. Cover and leave to steam for about 20 minutes

Place the chickpeas in a bowl and season with salt, olive oil and Italian seasoning. Leave to rest for 30 minutes

Place the halved cherry tomatoes in a bowl. Season with salt, olive oil, basil and garlic. Leave to rest for 30 minutes

In a large bowl mix the couscous the chickpeas and the tomatoes and add the basil to garnish
