Serves: 4

Ingredients:

  • 4 Soles or Plaices
  • Flour to dust
  • 40 gr Butter
  • 4 tbsp Extra virgin olive oil
  • 1 handful Parsley
  • Salt
  • 1 Lemon

Method:

    Season the fish and flour the fish shaking off the excess of flour
  • 2
    Heat a large non stick frying pan
  • 3
    Cook the fish in batches of 2
  • 4
    Melt half of the butter and add the oil
  • 5
    When hot put 2 fillets at the time and cook 5 minutes per side
  • 6
    Remove the excess of fat from the fish and transfer into a serving plate
  • 7
    Cook the rest of the fish
  • 8
    Chop the parsley and sprinkle over the fish
  • 9
    Serve with sliced lemon
