Pea and Feta Salad

Serves: 4
Ingredients:
250 gr Peas
50 gr Pea shoots
80 gr Feta cheese
3 Salad onion
½ Lemon juice
2 tbsp Extra virgin olive oil
1 handful Mint (optional)
Method:

Cook the peas in boiling water for 2 minutes. Drain and refresh under cold water

Toss the peas with the pea shoots

Crumble the feta into the salad
4
Add the sliced the salad onion
5
Season with lemon juice, olive oil salt
6
Add the mint
7
Serve and eat immediately
