Panzanella (Bread and vegetable salad)

Ingredients:
200 gr Stale bread
3 tbsp Extravirgin olive oil
1 tbsp Vinegar
½ Cucumber
½ Red onion
12 Cherry tomatoes
1 small Garlic cloves
Handful of basil leaves
Salt and black pepper
Tuscan bread and vegetable salad
Method:

Put the bread in a bowl and add water. Leave to soak for 10/15 minutes

In the meantime cut the cucumber into small cubes

Halve the cherry tomatoes

Slice the onions

Chop the garlic finely

Remove the bread fro the water and squize the bread with your hands to release the water. The bread should be nicely soft and slightly wet

In a mixing bowl put the bread, and all the chopped ingredients

Season with salt, pepper, olive oil and vinegar

Add the basil on top and serve
