Serves: 4

Ingredients:

  • 40 gr Butter
  • 1 tbsp Olive oil
  • 500 gr Onions, thinly sliced
  • 2 tsp Sugar
  • 600 ml Beef stock
  • ½ glass White wine
  • 4 slices French bread
  • Grated cheese
  • Salt taste

Method:

    Melt the butter with the oil in a large heavy-based pan
  • 2
    Add the onions and fry with the lid on for 10 minutes until soft
  • 3
    Sprinkle in the sugar and cook for 12 more minutes, stirring frequently, until caramelized
  • 4
    Increase the heat and keep stirring as you gradually add the wine, followed by the hot stock. Cover and simmer for 15-20 minutes

    Toast the bread under the grill. Once toasted, add the grated cheese and leave it to melt under the grill

    Serve the onion soup in bowls with the bread and cheese on top
