Mexican Rice Mexican Rice (1)

DIFF: Easy -- PREP: 10 mins -- COOK: 40 mins
Serves: 4

Ingredients:

  • 1 cup Basmati rice
  • 1 Onion
  • 1 Red pepper
  • 1 tps Cumin
  • ½ tin Canned tomatoes
  • 3 tbsp Soured cream
  • 400 gr Black eyed beans (tin)
  • 1 handful Coriander
  • 1 tbsp Lemon juice
  • 1 tsp Paprika
  • 2 tsp Salt

Method:

    Steam Basmati rice for 20 minutes
  • 2
    In the meantime chop the onions and peppers and fry with oil in a large frying pan, for 10 minutes

    Add cumin, tomatoes and beans and cook for 15 minutes
  • 4
    Add the rice and Soured cream, coriander and cook for further 10 minutes
  • 5
    Add lemon juice and salt. Season with paprika and more salt (if needed)

    Leave to rest for 5 minutes before serving
