Serves: 4

Ingredients:

  • 1 large Aubergines
  • 2 large Tomatoes
  • 2 Mozzarella cheese
  • 10 leaves Basil
  • 1 tbsp Extra virgin olive oil
  • Salt and pepper
  • Parmesan cheese

Method:

    Put the chopped basil in a bowl, pour over the olive oil, season with salt and leave to marinade
  • 2
    Cut the aubergines into 1 cm disc, 2 per serving
  • 3
    Heat a large frying pan, add the olive oil. Add the aubergines to the pan, season with salt and pepper and cook for 3 minutes each side until golden brown

    Once cooked transfer to a tray and keep in a warm place
  • 5
    Cut the tomatoes into 1cm discs, two for each serving then cook in the pan for 1 minute on each side, season with salt and pepper
  • 6
    On a serving plate place a slice of aubergine at the bottom then some Parmesan shavings, then a tomato slice and mozzarella cheese. Repeat this pattern to get two layers per serving

    Once all complete, drizzle over the basil and olive oil prepared at the beginning
