Ingredients:

  • 100 gr Green lentils
  • ½ stalk Celery
  • 1 clove Garlic
  • 80 gr Kale stalk removed
  • 6 gr Basil leaves
  • 6 gr Parsely
  • 6 gr Mint leaves
  • 4 tbsp Greek yogurt
  • 2 tbsp Lemon juice
  • 2 tbsp Balsamic vinegar
  • 4 tbsp Extravirgin olive oil
  • ½ tbsp Runny honey

Method:

    Boil the lentils with celery and garlic in water for 20/25 minutes, until the lentis are tender, but do not overcook
  • 2
    Drain the lentis, remove the celery and the garlic and leave to cool down
  • 3
    In a bowl mix kale, basil, parsely and mint, season with salt
  • 4
    In a small bowl prepare the dressing by mixing yogurt, lemon juice, balsamic vinegar, olive oil and honey
  • 5
    Crush the garlic and chop finely. Add it to the dressing
  • 6
    Pour the dressing on the salad and mix well

    Add the lentils to the salad and mix again
