Kale, Mint, Basil and Lentils Salad

Serves: 4
Ingredients:
100 gr Green lentils
½ stalk Celery
1 clove Garlic
80 gr Kale stalk removed
6 gr Basil leaves
6 gr Parsely
6 gr Mint leaves
4 tbsp Greek yogurt
2 tbsp Lemon juice
2 tbsp Balsamic vinegar
4 tbsp Extravirgin olive oil
½ tbsp Runny honey
You can't stop eating the Kai's famous salad
Method:

Boil the lentils with celery and garlic in water for 20/25 minutes, until the lentis are tender, but do not overcook

Drain the lentis, remove the celery and the garlic and leave to cool down

In a bowl mix kale, basil, parsely and mint, season with salt

In a small bowl prepare the dressing by mixing yogurt, lemon juice, balsamic vinegar, olive oil and honey

Crush the garlic and chop finely. Add it to the dressing

Pour the dressing on the salad and mix well

Add the lentils to the salad and mix again
