Serves: 4

Ingredients:

  • 150 gr Couscous
  • 150 ml Vegetable stock
  • 1 Onion
  • 5 tbsp Extra virgin olive oil
  • 1 tsp Cumin
  • 50 gr Unshelled pistachios
  • 250 gr Rocket salad
  • 20 gr Parsley
  • 20 gr Coriander
  • 20 gr Tarragon
  • 20 gr Mint

Method:

    Put the couscous in a large bowl and cover with the boiling vegetable stock. Leave for 20 minutes

    In the meantime, fry the onion in 1 tablespoon of olive oil. Add salt and cumin and cook until golden
  • 3
    Make the herb paste by placing the parsley, coriander, tarragon, mint and 4 tablespoon of olive oil in a blender
  • 4
    Blend until smooth
  • 5
    Add the green paste to the couscous. Mix well together. Add the cooked onion and the pistachios
  • 6
    Dress the rocket salad with salt pepper and lemon juice
  • 7
    Mix the green couscous with the rocket salad
