Serves: 4

Ingredients:

  • 4 large Potatoes (Désirée or King Edward)
  • 300 gr Plain flour
  • 15 gr Salt

Method:

    Preheat the oven at 180C. Wash the potatoes and pierce with a fork. Bake for about one hour until soft in the middle
  • 2
    Cut the potatoes in half, scoop out the flesh and pass through a potato ricer or sieve into a large bowl
  • 3
    Add the flour and the salt and make a soft dough. Do not overwork the mixture
  • 4
    The mixture need to be quite smooth. If is to wet add some more flour
  • 5
    Take a ball of about 50 gr of dough and roll into a long sausage about 1 cm diameter
  • 6
    Cut the sausage into 2 cm lengths
  • 7
    Optionally you can roll each piece against the back of the fork to make ridges
