DIFF: Medium -- PREP: 2 hours and 30 mins -- COOK: 30 mins
Serves: 6

Ingredients:

  • 500 gr Strong flour
  • 210 ml Water
  • 15 gr Fresh yeast
  • 40 ml Extra virgin olive oil
  • 1 Boiled potato
  • 10 gr Salt
  • 15 gr Sugar
  • Rosemary or sage for topping

Method:

    In a large bowl, sift the flour
  • 2
    Crumble the yeast into the flour and mix with a wooden spoon
  • 3
    Add the salt and sugar and mix
  • 4
    Make a well in the center of the flour and add the mashed potato, extra virgin olive oil and the water
  • 5
    Mix the dough until all the dry ingredients are incorported

    Move to a floured surface and knead the dough for about 10 minutes until smooth and elastic

    Put the dough into a bowl, cover with a towel and leave in a dry place to raise for about 2 hours or until it is doubled in size

    Oil a baking tray and flatten the dough into the tray pushing into the corners. In the meantime heat the oven at 230C

    Leave to prove (20/30 minutes)

    Add some olive oil on top and cook in the oven at 230C for 30/40 minutes

    After15/20 minutes add the rosemarry

    Leave to cool down in a wire rack
