Serves: 4

Ingredients:

  • 2 tbsp Extra virgin olive oil
  • 4 Sausages
  • 1 tsp Tomato puree
  • 2 sprigs Sage
  • 800 gr Cannellini beans (tin)
  • Salt
  • ½ cup Water
  • 4 slices Bread

Method:

    Heat a pan with olive oil. Cut the sausages in big chunks and add to the pan. Cook for about 5 minutes until cooked through
  • 2
    When the sausages are cooked add half of the sage and the tomato puree and cook for few minutes by stirring continuously
  • 3
    Add the beans including the liquid and the water add also the rest of the sage and season with salt
  • 4
    Boil for one hour covered stirring occasionally. Add more water in case is too dry
  • 5
    Tip: Half way cooking, take out 4 to 6 tablespoons of beans and mash them before putting back on the pan

    Once cooked, the beans will be an orangy creamy sauce

    Before serving toast the bread and serve the beans with the toasted bread
