Crostini with Peppers Crostini with Peppers (1)

Serves: 4

Ingredients:

  • 1 Red peppers
  • 1 Yellow peppers
  • 2 cloves Garlic
  • 2 tbsp Extra virgin olive oil
  • 4 slices Bread
  • 1 handful Parsely
  • Salt

Method:

    Heat a pan with the olive oil
  • 2
    Chop the garlic and add to the pan
  • 3
    While the garlic is frying wash the peppers, remove the seeds and cut in thin slices (about half cm wide)
  • 4
    Add the sliced peppers and salt to the pan and leave to fry for 15 minutes stirring occasionally

    In the meantime cut the slices of bread in half and toast the bread
  • 6
    Once the peppers are cooked layer the bread on a serving plate and add the peppers on top
  • 7
    Chop the parsley and sprinkle over the peppers
  • 8
    Drizzle the crostini with the olive oil from the pan
  • 9
    Tip: if you like garlic you can rub the toasted bread with some fresh garlic before adding the peppers
