Ingredients:

  • 500 gr Strong white flour
  • Extra flour for dusting
  • 375 ml Water
  • 15 gr Fresh yeast
  • 10 gr Salt
  • 30 ml Olive oil

Method:

    Crumble the yeast into 300 gr of flour, add 200 ml of lukewarm water. Whisk for 5 minutes then leave to ferment for 4 hours

    Add the remaining of the flour and water, salt and olive oil. Whisk for 5 minutes then leave to ferment for 2 hours

    Tip the dough out onto a lightly floured surface and divide into two. Stretch each piece of dough into a 20 cm loaf then allow to rest for 1 hour

    Divide each piece of dough into two. Stretch each of the four pieces in 20 cm. Leave for 1 hour

    Preheat the oven to 200C. Dust the loaves with flour and bake for 30 minutes until golden brown

    Transfer to a wire rack to cool
