Chorizo Tortilla Chorizo Tortilla (1)

Serves: 4

Ingredients:

  • 80 gr Chorizo
  • 2 Potatoes (medium)
  • 2 tbsp Sunflower oil
  • 12 Cherry tomatoes
  • 4 Eggs
  • Salt and pepper
  • 2 handful Rocket salad
  • Italian Seasoning
  • Paprika

Method:

    Peel and cut the potatoes into small cubes. Boil the potatoes in water for about 8 minutes
  • 2
    Heat the oil in a frying pan. Add the potatoes and fry them over a medium heat for about 8 minutes
  • 3
    In the meantime halve the cherry tomatoes and chop the chorizo into half centimer cubes. Once the potatoes are ready add the chorizo to the pan and cook for 4 minutes

    Crack the eggs into a jug and beat them together. Season with salt and pepper and a pinch of Italian Seasoning

    Add the cherry tomatoes to the frying pan and season with salt and paprika
  • 6
    Pour the eggs into the pan and cook without stirring for 5 minutes. Until the base of the tortilla is set

    Add the Italia Seasoning and paprika on top
  • 8
    To cook the top place the pan under the grill and cook for another 5 minutes until the top is set

    Remove from the pan and transfer the tortilla to a serving plate
  • 10
    Serve the tortilla with rocket salad
