Serves: 4

Ingredients:

  • 50 gr Lentils
  • ½ Stalk Celery
  • 50 gr Broad beans
  • 50 gr Peas
  • 100 gr Tender salad
  • 20 gr Almond
  • 1 tbsp Extra virgin olive oil
  • Salt and pepper to taste

Method:

    In a pan put some olive oil and lightly cook the celery
  • 2
    Add the lentils and water and cook for 20 minutes
  • 3
    Once cooked leave to cool down a bit
  • 4
    Lightly cook the peas in olive oil
  • 5
    In the meantime shell the broad beans and remove the skin
  • 6
    Mix the shelled broad beans with peas, lentils and almond
  • 7
    On a serving plate dress the salad with salt, pepper and olive oil
  • 8
    Pour the mixed vegetables on top of the salad
