DIFF: Medium -- PREP: 3 hours and 40 mins -- COOK: 1 hour

Ingredients:

  • 500 gr Strong flour
  • 330 ml Water
  • 15 gr Fresh yeast
  • 8 gr Salt
  • 12 gr Sugar

Method:

    In a large bowl sift the flour

    Crumble the yeast in the flour and mix it in

    Add the salt and sugar and mix it in
  • 4
    Make a well in the center of the flour and pour the water in
  • 5
    Mix all the ingredients in the bowl then transfer to a floured surface
  • 6
    Knead the dough until it is smooth and elastic
  • 7
    Leave to raise for about 90 minutes or until it is doubled in size
  • 8
    Knock back
  • 9
    Leave to raise for a further 90 minutes or until it is doubled in size again
  • 10
    Make a loaf and leave to prove (20/30 minutes)

    Cook in the oven at 250C for the first 10 minutes
  • 12
    Reduce the temperature of the oven to 200C and cook for other 50 minutes
