DIFF: Easy -- PREP: 40 mins -- COOK: 3 hours and 20 mins
Serves: 8

Ingredients:

  • 1 Carrots
  • 1 Stalk Celery
  • 1 Onions
  • 300 gr Minced beef
  • 300 gr Minced pork
  • 1 glass Wine
  • 80 gr Concetrated tomato puree
  • 500 gr Tomatoes passata
  • pinch Ground nutmeg
  • 100 ml Chicken stock or water
  • 6 tbsp Extra virgin olive oil
  • 12 gr Butter

Method:

    Chop the carrots, celery and onions in big chunks. Put the chunks in a blender and wizz for couple of minutes

    Warm a shallow pan with lid
  • 3
    When the pan is hot add the olive oil and the butter
  • 4
    When the butter is completely melted add the finely chopped vegetables and cook for 10 minutes until are soft
  • 5
    In the menatime mix the minced meat and add some salt and pepper
  • 6
    Once the vegetable are soft add the meat and cook for 15/20 minutes until the meat is cooked through

    Add the wine and leave to boil until is evaporated

    Add the concentrated of tomatoes along with the chicken stock/water and the tomatoe passata

    Mix well and add a pinch of ground nutmeg

    Leave to boil for a 2 to 3 hours at very low heat until the tomato is thick and creamy
