Beetroot and Orange Salad

Serves: 4
Ingredients:
4 Beetroot peeled
2 Orange
2 sprigs Fresh mint
Lemon juice
30 gr Walnuts
2 tbsp Olive oil
1 tbsp Runny honey
1 tsp Connamon
Salt and pepper

Cut the beetroot into wedges. Heat a large lidded pan and add half of the oil

Spread the beetroot in the pan, season with salt and pepper. Cover and cook for about 15 minutes until tender

For the dressing: pour the oil in a jam jar, add a pinch of salt, add the lemon juice, honey and cinnamon, close the lid and shake until is well mixed

Peel the orange then cut into round slices

Chop and roast the walnuts for 5 minutes in a pan

Arrange the beetroot and orange slices in a bowl or plate. Drizzle over the dressing

Scatter over the walnuts and mint
